Frijole Charros (Cowboy Beans)

 

Ingredients - Serves 6

  • 2 slices bacon, cut into ½“ pieces
  • ½ cup onion, chopped
  • 2 garlic cloves, minced
  • 1 Serrano pepper, seeded and chopped
  • 7 oz. canned diced tomatoes
  • 16 oz. can pinto beans
  • ½ cup of cilantro, chopped
  • Salt and pepper to taste

Directions

In a large pot cook bacon over medium heat, stirring occasionally until crisp. Remove cooked bacon and drain on paper towels. Reserving bacon fat in the pot.   

Add onions, garlic and Serrano pepper. Sauté in bacon fat until lightly browned, about 6 - 8 minutes, stir frequently. Add bacon and tomatoes. Reduce heat and cook for 3 - 4 minutes.

Add pinto beans. Stir gently and simmer over low heat for 20 - 25 minutes. Salt and pepper to taste. Place in a serving dish and garnish with chopped cilantro.
