Conch Chowder

Ingredients - Serves 8

  • 2 Tbsp. olive oil
  • 1 lb. conch meat, cleaned and chopped
  • 2 Tbsp. garlic, minced
  • 1 ½ cups onions, diced ½”
  • ½ cup celery, diced ½”
  • 3 Tbsp. tomato paste
  • 1 quart chicken broth, homemade or canned
  • 2 tsp. fresh thyme, chopped
  • 1 tsp. fresh oregano, chopped
  • ½ cup carrots, peeled and diced ½"
  • 1 ½ cups potatoes, peeled and diced ½”
  • 1 ½ cups fresh tomatoes, diced ½”
  • 2 cups canned clam juice
  • Salt and pepper to taste

Directions

Heat oil in a large pot over medium high heat.  

Add the conch meat and sear for 1 to 2 minutes, stirring frequently. Add the garlic, onions, and celery. Stir and sauté for 2 minutes.

Add tomato paste, chicken broth, thyme, oregano, carrots, potatoes, tomatoes and clam juice. Mix well and bring to a boil. Reduce heat and simmer until the potatoes are tender. Season with salt and pepper to taste.

Serve hot with crackers or croutons.
