Conch Chowder
Ingredients - Serves 8
- 2 Tbsp. olive oil
- 1 lb. conch meat, cleaned and chopped
- 2 Tbsp. garlic, minced
- 1 ½ cups onions, diced ½”
- ½ cup celery, diced ½”
- 3 Tbsp. tomato paste
- 1 quart chicken broth, homemade or canned
- 2 tsp. fresh thyme, chopped
- 1 tsp. fresh oregano, chopped
- ½ cup carrots, peeled and diced ½"
- 1 ½ cups potatoes, peeled and diced ½”
- 1 ½ cups fresh tomatoes, diced ½”
- 2 cups canned clam juice
- Salt and pepper to taste
Directions
Heat oil in a large pot over medium high heat.
Add the conch meat and sear for 1 to 2 minutes, stirring frequently. Add the garlic, onions, and celery. Stir and sauté for 2 minutes.
Add tomato paste, chicken broth, thyme, oregano, carrots, potatoes, tomatoes and clam juice. Mix well and bring to a boil. Reduce heat and simmer until the potatoes are tender. Season with salt and pepper to taste.
Serve hot with crackers or croutons.
